Twice Smoked Potatoes


  • 4 large russet potatoes

  • Grilling Gods Salt of the Gods rub

  • 1 teaspoon Grilling Gods Southern Heat rub

  • 1 cup shredded cheddar cheese

  • 4-6 strips of bacon

  • 1 green onion

  • Sliced Jalapeño (optional)

  • 1 Cup hot milk


  • Set your smoker to 450°

  • Scrub the potatoes under cold running water and pat dry with paper towels. Poke in several places with a fork. Spray the potatoes with oil spray and season the whole outside of the potatoes with Grilling Gods Salt of the Gods rub.

  • Arrange the potatoes directly on the grill grate and bake for about 1 hour, or until the potatoes are cooked through.

  • In the meantime cook your bacon - season your strips of bacon with Grilling Gods Southern Heat rub and cook in your air fryer at 400° for 6 minutes (place a piece of bread under your tray to help with the bacon grease)

  • Chop up your green onion and bacon and place in medium bowl.

  • Once potatoes are cooked use oven mitts to transfer the potatoes to a rimmed baking sheet. Let the potatoes cool slightly for 2-3 minutes.

  • Reduce smoker temperature to 375℉

  • Cut the potatoes in half lengthwise, then scoop the potato flesh into the bowl with your bacon & onion, leaving a 1/4-inch-thick layer of flesh in the potato skins.

  • Add the hot milk, cheese, and Grilling Gods . Salt of the Gods to the bowl and mix well until your potatoes are no longer lumpy.

  • Fill the potato skins with the potato filling. Sprinkle some shredded cheddar cheese on top.

  • Use a baking sheet or add the potatoes directly to the grill grates. Close the lid and bake for 15-20 minutes, or until golden brown and cheese is melted.

  • Top with more green onion, sour cream or jalapeño and enjoy immediately!
