The Best egg salad - smoked hardboiled eggs


8 hard boiled eggs

1/2 cup of mayonnaise

1 1/2 teaspoons yellow mustard

1 green onion thinly sliced

1 teaspoon Grilling Gods Southern Heat rub

1/8 cup finely chopped dill pickle

Directions for smoked hardboiled eggs

  • Preheat your smoker to 325° F.

  • Place the eggs directly on the grates of your smoker. Close the lid of your smoker and smoke for 30 minutes

  • Remove the cooked eggs from the smoker and place into an ice bath immediately. Chill completely.

  • Reduce heat on your smoker to 180 degrees F.

  • Peel the eggs and return them to the grill. Smoke for 30-45 minutes depending on the amount of smoke flavor you want in your eggs.

  • Place eggs in a large saucepan and cover them with cool water by 1 inch.

  • Cover with a lid and bring water to a boil over high heat; when the water has reached a full rolling boil, reduce the heat to medium and set the timer for the desired time. Boil for 6 – 7 minutes over medium heat for perfect hard-boiled eggs.

  • Using a slotted spoon, transfer them to a large bowl of ice water and let them cool for a few minutes. Or you can place them under cool running water to stop the cooking.

Egg salad direction:

  • Cut eggs in half. Remove yolks and chop whites.

  • Mash yolks with mayonnaise, mustard and Grilling Gods Southern Heat to taste until smooth and creamy.

  • Add remaining ingredients and stir well.

  • Serve on bread or over lettuce.
