Smoked Crustless Quiche - Keto & Gluten Free


  • 2 tbsp. butter

  • 1/2 yellow onion, peeled and diced

  • 8 ounces of cooked ham

  • 12 large eggs

  • 3/4 -1 cup heavy whipping cream

  • 1/2 cup shredded Monterey jack cheese

  • 1/8 cup shredded cheddar cheese

  • 8 ounces fresh spinach

  • 1-2 tbsp. Salt of the Gods rub from Grilling Gods

  • 1-2 tbsp. Slice of Heaven rub from Grilling Gods


  • Preheat smoker to 375°F

  • In a small skillet over medium heat, melt butter, then add chopped onion and sauté until it begins to caramelize and become fragrant (about 10 minutes) transfer to a large mixing bowl.

  • Crack open eggs into the bowl with the onion, then pour in heavy whipping cream. Whisk together until fully combined.

  • Chop ham into small pieces and add to the egg mixture.

  • Roughly chop spinach and add to the egg and ham mixture. Add 1 1/2 tablespoon of Grilling Gods Salt of the Gods and 1 tablespoon of Grilling Gods Slice of Heaven. Add in all of the shredded Monterey jack cheese and mix everything together.

  • Prep a 16 inch cast iron skillet with oil and pour the mixture into the cast iron skillet. Place skillet in smoker and smoke for 35 minutes and check for egg mixture to be set, but not overly firm. The sides should be slightly browned.

  • Sprinkle the shredded cheddar cheese on top with some more Salt of the Gods and Slice of Heaven and put back in the smoker for 3-5 minutes to melt the cheese.

  • Remove from smoker and let rest 10 minutes before eating!
