Smoked BBQ Pork Chops
4-Thick cut boneless pork chops
1-2 tablespoons Grilling Gods Sweet Backyard BBQ rub
For Grilling Gods homemade tangy BBQ sauce:
1/4 cup Grilling Gods Sweet Backyard BBQ rub
1/4 cup brown sugar
1/8 cup apple cider vinegar (or a little less of you want a sweeter less tangy sauce)
1/8 cup of water (or a little less if you want a thicker sauce)
1/4 cup ketchup
Coat the pork chops on all sides with Grilling Gods Sweet Backyard BBQ rub and let sit for 30 minute up to a few hours in the refrigerator.
Remove pork chops from the refrigerator and start up your smoker. We used Apple pellets from Bear Mountain BBQ woods.
While your smoker is heating up prepare your BBQ sauce. Mix all the ingredients in a small bowl and let sit.
Set smoker to 250°F on high smoke and smoke your pork chops for 45 minutes, then add your bbq sauce to the tops of your pork chops and continue to smoke until the internal temp reaches 145°F (about 10-15 more minutes)
Once they have reached your desired internal temperature remove from the smoker and let sit 5 minutes before slicing!
Slice and top with more of the BBQ sauce if you want! Enjoy!
