Leftover Air Fryer Taquitos

Ingredients:

  • leftover meat - this recipe used leftover smoked pork tenderloin seasoned with Grilling Gods Sweet Backyard BBQ

  • 1/2 bell pepper (or any leftover veggies)

  • 1/4 white onion

  • 4-8 corn tortillas

  • Taco mix shredded cheese blend

  • spray cooking oil

mix equal parts salsa & sour cream for a dipping sauce


Directions:

  • Heat air fryer to 370°F and set timer to 10 minutes

  • finely chop up your leftover meat and veggies

  • In a pan add some oil and cook your leftover meat & veggies for 3-5 minutes or until veggies are softened. Add some of your cheese, mix and remove from the pan.

  • in the same pan on medium heat warm your tortilla one at a time, once the tortilla is flexible remove from pan and add your chopped leftovers and shredded cheese and roll up, make sure not to over fill your tortilla.

  • once your air fryer is heated place a sheet of aluminum foil on the bottom of the tray and place your rolled up tortillas on top, spray the tortillas with your oil spray and cook for 10 minutes. Check halfway through and you can flip your taquitos, then to make sure you don't over cook you can check them every two minutes until they are browned to your liking.

  • Once done, remove from air fryer and eat right away. You can dip in your sauce of choice and even top with a variety of items like sour cream, cilantro, or salsa! Get creative! Enjoy!!
