Jamaican Jerk chicken sandwich
4 - Boneless chicken thighs
1-2 tablespoons of Grilling Gods Sailor's Spice rub
4 - hamburger buns
(cucumber salad topping)
1 - large cucumber
1 - tablespoon of Grilling Gods Sweet Backyard BBQ rub
1 - tablespoon of Grilling Gods Salt of the Gods rub
1/2 red onion chopped
1/4 cup of oil
2 tablespoons of white vinegar
1/4 cup sour cream
1 tablespoon sugar
(spicy ranch sauce)
1/4 cup ranch dressing
1/8 cup mayonnaise
1 - tablespoon of Grilling Gods Sailor's Spice
1-season both sides of chicken thighs with Grilling Gods Sailor's Spice and let sit in refrigerator for a few hours or over night. (the more rub you add the spicier the chicken will be)
2-cook the chicken to internal temp of 165°F
We smoked the chicken thighs in an off set smoker with charcoal and some lump wood at 350°F for about 25-30 minutes or until the internal temp of the chicken was 165°F, pulled them off the smoker and let sit for 3-5 minutes.
3-while your chicken is cooking peal and slice your cucumber and put together your cucumber salad. Mix together the following ingredients in a medium bowl: sliced cucumbers, red onion, oil, sour cream, sugar, Sweet Backyard BBQ rub, Salt of the Gods rub, vinegar, and 1 tablespoon of water. Let sit in refrigerator until the chicken is finished.
4 - make your spicy ranch sauce by mixing together in a small bowl the ranch, mayonnaise, and Sailor's Spice rub.
5 - Once you pull your chicken off the grill you can toast your bun for 1-2 minutes on the grill.
6 - assemble your chicken sandwich: add some spicy ranch to the top and bottom of your bun, place your chicken thigh on, and top with some sweet and crispy cucumber slices and your top bun! Enjoy!
(if you don't want the cucumber on your sandwich you can always eat it as a side dish)
