Jalapeño Chips Appetizer
1/4 cup cream cheese
1/2 cup fresh spinach
2 slices of bacon
1 Tbsp. Grilling Gods Slice of Heaven
1/8 cup parmesan cheese
oil for frying
1 cup all-purpose flour
3/4 teaspoon baking powder
1 cup cold water
1 tbsp. Grilling Gods Salt of the Gods rub
1 tsp Grilling Gods Southern Heat rub
Cook and chop 2 slices of bacon
Cook the fresh spinach in the bacon grease for about 30 seconds just to wilt the spinach, drain and chop it up and add it to a medium bowl with the bacon bits.
Add the parmesan cheese, cream cheese, and Grilling Gods Slice of Heaven rub. Stir up until all the ingredients are incorporated equally. (it helps if the cream cheese is room temperature)
Clean out the insides of the Jalapeños including the veins and seeds (if you want them spicy you can leave some of the veins and seeds)
Slice whole Jalapeños in 1/2 inch rounds. So you end up with a full circle.
Heat oil in a pan about 2 inches deep to 370°F
Fill the Jalapeño rounds with the cream cheese mixture.
full coat both sides of the cream cheese filled Jalapeño rounds in the batter mixture.
Add to the hot oil and fry 2-3 minutes on each side until they are nice a golden brown. fry longer for a more crispy Jalapeño chip!
